Shrimp, Corn, and Black Bean Stir-Fry
- 1 tablespoon olive oil
- 8 ounces medium shrimp peeled, deveined, tails removed
- 1 cup raw corn kernels
- 1 can 15 ounces black beans, rinsed and drained
- Heat oil In a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook, stirring occasionally, until shrimp is opaque throughout. Add corn and beans and cook, stirring occasionally, until heated through.
