Ingredients

  • 1 tablespoon olive oil
  • 8 ounces medium shrimp, peeled, deveined, tails removed
  • Salt
  • Pepper
  • 1 cup raw corn kernels
  • 1 can (15 ounces) black beans, rinsed and drained

Instructions

  1. Heat oil In a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook, stirring occasionally, until shrimp is opaque throughout. Add corn and beans and cook, stirring occasionally, until heated through.
