Pesto Chicken and Potatoes – “Depression-Friendly” Recipes

  • 2 medium chicken breasts (bone in, skin on)
  • Salt
  • Pepper
  • 1 1/2 pounds Yukon gold potatoes
  • 3 tablespoons prepared pesto, divided
  • 1 teaspoon olive oil


  1. Cut potatoes into 2 inch pieces
  2. Heat oven to 375° and line a large sheet pan with parchment paper.
  3. Season chicken on all sides with salt and pepper, then spread ½ tablespoon pesto over the skin of each breast
  4. On the sheet pan, toss potatoes with olive oil and remaining 2 tablespoons pesto. Add chicken breasts to sheet pan.
  5. Roast 40 minutes, until chicken is cooked through.
  6. Let chicken rest 5 minutes. Remove bone, slice, and serve.
