Ingredients
- 2 medium chicken breasts (bone in, skin on)
- Salt
- Pepper
- 1 1/2 pounds Yukon gold potatoes
- 3 tablespoons prepared pesto, divided
- 1 teaspoon olive oil
Instructions
- Cut potatoes into 2 inch pieces
- Heat oven to 375° and line a large sheet pan with parchment paper.
- Season chicken on all sides with salt and pepper, then spread ½ tablespoon pesto over the skin of each breast
- On the sheet pan, toss potatoes with olive oil and remaining 2 tablespoons pesto. Add chicken breasts to sheet pan.
- Roast 40 minutes, until chicken is cooked through.
- Let chicken rest 5 minutes. Remove bone, slice, and serve.
