Ingredients
- 1/2 cup jarred tomato sauce
- 1/3 cup dry quinoa
- 2 large eggs
- Salt
- Pepper
Instructions
- In a small skillet, combine tomato sauce, quinoa, and ⅓ cup water. Bring to a boil, then reduce to a simmer and cook 15 minutes.
- Crack eggs into skillet, season with salt and pepper, and cook additional 10 minutes, until egg whites are cooked through and yolks are soft.
