Ingredients

  • 1/2 cup jarred tomato sauce
  • 1/3 cup dry quinoa
  • 2 large eggs
  • Salt
  • Pepper

Instructions

  1. In a small skillet, combine tomato sauce, quinoa, and ⅓ cup water. Bring to a boil, then reduce to a simmer and cook 15 minutes.
  2. Crack eggs into skillet, season with salt and pepper, and cook additional 10 minutes, until egg whites are cooked through and yolks are soft.
