Baked Beans With Spinach and Eggs
- 1 cup baked beans
- 1 1/2 cups loosely packed baby spinach
- 2 large eggs
- In a small skillet, bring baked beans to a simmer over medium heat. Add spinach and cook, stirring, until spinach is wilted. Crack eggs on top.
- Cover, reduce heat to low, until egg whites are cooked through but yolks are still soft.
