Baked Beans With Spinach and Eggs

Ingredients

  • 1 cup baked beans
  • 1 1/2 cups loosely packed baby spinach
  • 2 large eggs
  • Salt
  • Pepper

Instructions

  1. In a small skillet, bring baked beans to a simmer over medium heat. Add spinach and cook, stirring, until spinach is wilted. Crack eggs on top.
  2. Cover, reduce heat to low, until egg whites are cooked through but yolks are still soft.
